Arctic Char Fillet
Arctic Char are similar to salmon, migrating between freshwater and saltwater, but they tend to live much further north. It has a moderately firm but fine flake and is mild in flavour, similar to a trout, but richer due to its higher fat content.
Char is easy to cook as it’s a fatty fish so won’t easily go dry. Baking, broiling, grilling, sautéing, and poaching are all great ways to prepare and highlight this mild fish.
Keep things simple and blend together oil, thyme, salt, and pepper. Brush the fish pieces with this flavoured oil and cook skin side up for 2-3 minutes. Add some butter to the pan and flip the fish and continue to cook for 4-5 minutes. Remove char from pan and pour in wine or stock, bring to boil, and add butter. Drizzle over fish to serve. Enjoy!
